Gooey Butter Cookies

Here’s a Midwest treat that’s extra sweet. You may need adult help with creating and baking these cookies.

½ C (1 stick) butter, softened
1 box yellow cake mix
¼ tsp vanilla
Powdered sugar, for dipping
1 egg
Nonstick cooking spray
1 (8 oz) pkg cream cheese

Lightly coat a cookie sheet with cooking spray.

Beat butter, vanilla, egg & cream cheese until light and fluffy. Mix in dry cake mix. Chill for 30 minutes. (This is an important step as it helps the dough firm up so it’s less messy when you form the cookies. Remember—these aren’t called Gooey Butter cookies for nothing.)

Preheat oven to 350 degrees.
One at a time, drop dough by teaspoonfuls in bowl of powdered sugar. Roll in balls. (This is the messy—but fun—part. It helps to keep your hands dusted with powdered sugar so the dough balls won’t stick to you as you roll them.)

Bake for 12 minutes or until lightly browned.

These cookies will practically melt in your mouth. Who said goo isn’t good???
