Southwest BLT Rollups

Quick and easy and tasty! Who could ask for more?

4 Tortillas (flour, corn, spinach, whatever is your favorite)
4 Tablespoons of Southwest Ranch Dip
4 Tablespoons of Salsa
4-8 slices of ready-to-eat Bacon, crumbled
4 Tablespoons of Cheese (shredded Cheddar or Monteray Jack)
4 Lettuce leaves, torn into small pieces (or sliced by an adult)

This recipe is easy to do if you gather all your ingredients in order and make an assembly line. First comes the four Tortillas. Lay them out side-by-side. Spread a Tablespoon of Dip on each. Then a Tablespoon of Salsa on each. Sprinkle the crumbled Bacon, shredded Cheese, and Lettuce evenly over the tortillas. Finally, roll up the tortillas and enjoy.

If you’d like to try this rollup warm, you might want to add some beans (refried, or black beans) and maybe a slice of avocado instead of the lettuce. Microwave to heat through. Yum!
